"It was recently recommended by my Gastroenterologist to follow the low FODMAP diet to try to eliminate what I call gut flare ups. The goal of following a low FODMAP diet is to eliminate foods that cause IBS symptoms and then you slowly introduce high FODMAP foods, one at a time. This helps you determine what foods cause you to have flare ups. I was lucky enough to have coverage to pay for a dietitian, but I find most recipes in the meal plan offered to me so bland, it made it difficult for me to stay on track. So, I researched what was allowed and not, how much of this and that was acceptable and tried my best to develop recipes that worked for me. This is a quick and easy recipe I really enjoy. My hubby does not eat salmon so I wrote the recipe for 1 person, but it is very easy to adjust serving wise, just make a packet for every person. Serve this with a cooked potato or a serving of cooked rice."

Step by Step Method

Step 1

Season the fish with salt and pepper and lay it, skin side down, on a piece of foil that has been coated with non stick spray.

Step 2

Lightly squeeze the lemon wedge over the fish and add the lemon wedge and cilantro on top of the fish.

Step 3

Make a leak proof packet with the foil and bake in a preheated 350 degree Fahrenheit oven until cooked through, about 20 to 25 minutes, depending on thickness of fish. It will flake easily when poked with a fork if it is cooked.

Step 4

Mix together the mayonnaise and mustard.

Step 5

Open packet, remove and discard the skin and lemon wedge.

Step 6

Spread the mayonnaise and mustard mixture over the fish and enjoy!

Bea, 5 stars, and to the moon and back. This is not your everyday salmon dish. A step up way higher. Not only was it easy to put together that sauce is so delicious. I actually grilled the salmon, but other than that, no changes. Perfect, bursting with tons of flavor. Thanks for posting this!
