"I love shrimp scampi, but was looking for something lighter and colorful to make for dinner tonight. I had the shrimp on hand, and a few other things, and the rest just came together :) This turned out very light, and was great with garlic bread."

Step by Step Method

Step 1

Boil pasta in medium saucepan for 7-8 minutes.

Step 2

While pasta boils, melt Smart Balance and olive oil in a medium pan over low heat. Add garlic and stir, cooking over medium-low heat for 2-3 minutes.

Step 3

Add shrimp and seasoned salt, and cook shrimp in Smart Balance and oil mixture just until pink, being careful not to overcook.

Step 4

Stir in tomatoes and asparagus well enough to coat with the sauce.

Step 5

Pour over drained pasta and mix well.

Followed your ingredient list on down, although I did use a little more than half a pound of fresh asparagus that I steamed until just fork tender, AND I used a full pound of shrimp! Absolutely delicious, & your recipe is a keeper! Thanks for sharing it!
