Step by Step Method
Step 1
Rinse, dry, hull and dice the strawberries into small chunks. Chop the basil, and set aside.
Step 2
Mix the strawberries and sugar in a medium size bowl. Let the berries sit for about 30 minutes, to help flavors to meld. If you like your berries a little on the sweeter side, let the strawberries sit for about 3 hours, but if you prefer more tart strawberries, omit the sugar, or use just a little. Taste as you go, so they are to your taste. Set aside.
Step 3
Using a serrated knife, cut the French Baguette into 1/2" thick slices, on the bias.
Step 4
Spread a thin layer of Goat cheese on top of each Baguette slice.
Step 5
Top each Baguette slice with a tablespoon of strawberries.
Step 6
Sprinkle the Balsamic vinegar and olive oil on top of the strawberries at the very end, so the bread doesn't get soggy.
Step 7
Top each Baguette slice with chopped basil leaves, and sprinkle with cracked pepper, to taste.
