Ingredients

The ingredients are:
  • 2 cups (about 20 large) strawberries, rinsed, dried with a paper towel, hulled and diced into small chunks
  • 1-2 tablespoons sugar (start with 1 tablespoon and add in more to taste)
  • 2 French baguettes, sliced into 1/2-inch slices, cut on the bias
  • 8 ounces goat cheese, at room temperature
  • 2 tablespoons olive oil
  • 4 teaspoons Balsamic vinegar
  • 1/2 cup fresh basil leaves, chopped
  • Freshly ground black pepper, sprinkled on top

How to Make

  • Step 1: Rinse, dry, hull and dice the strawberries into small chunks. Chop the basil, and set aside.

  • Step 2: Mix the strawberries and sugar in a medium size bowl. Let the berries sit for about 30 minutes, to help flavors to meld. If you like your berries a little on the sweeter side, let the strawberries sit for about 3 hours, but if you prefer more tart strawberries, omit the sugar, or use just a little. Taste as you go, so they are to your taste. Set aside.

  • Step 3: Using a serrated knife, cut the French Baguette into 1/2" thick slices, on the bias.

  • Step 4: Spread a thin layer of Goat cheese on top of each Baguette slice.

  • Step 5: Top each Baguette slice with a tablespoon of strawberries.

  • Step 6: Sprinkle the Balsamic vinegar and olive oil on top of the strawberries at the very end, so the bread doesn't get soggy.

  • Step 7: Top each Baguette slice with chopped basil leaves, and sprinkle with cracked pepper, to taste.
