Step 1: In a large cast iron frying pan or Teflon coated pan, add oil and heat until nice and hot. Coat the entire bottom of the pan with the oil.
Step 2: Add the minced garlic and fry until it just starts to turn brown, about 15-20 seconds. Watch the garlic closely to make sure it doesn't burn.
Step 3: Add the chilled rice, (and any veggies you may be adding) and stir well. Cook until the rice turns a light golden brown, about 5-7 minutes.
Step 4: Add salt and freshly cracked pepper, to taste, and mix well.
Step 5: When ready, serve with your favorite chicken, pork or beef dish.
