"Served with garlic mashed potatoes, brown sugar glazed carrots, coleslaw and rolls, you'll get so many compliments from your guests. Great for that special dinner or holiday meal! Sometimes I insert cloves of garlic into my roast for even more added flavor, but it is delicious either way!"

Step by Step Method
Step 1
Place roast, fat side up, on a rack in a shallow roasting pan.
Step 2
Sprinkle all over with garlic powder and rub into meat. Sprinkle roast with fresh cracked pepper.
Step 3
Cut onion into slices, and put all over top of roast, and hold in place with tooth picks.
Step 4
Bake at 350 degrees for 2 hours, or until meat thermometer registers 145 degrees(medium-rare).
Step 5
Let stand 10 minutes before slicing.
