"Served with garlic mashed potatoes, brown sugar glazed carrots, coleslaw and rolls, you'll get so many compliments from your guests. Great for that special dinner or holiday meal! Sometimes I insert cloves of garlic into my roast for even more added flavor, but it is delicious either way!"

Step 1

Place roast, fat side up, on a rack in a shallow roasting pan.

Step 2

Sprinkle all over with garlic powder and rub into meat. Sprinkle roast with fresh cracked pepper.

Step 3

Cut onion into slices, and put all over top of roast, and hold in place with tooth picks.

Step 4

Bake at 350 degrees for 2 hours, or until meat thermometer registers 145 degrees(medium-rare).

Step 5

Let stand 10 minutes before slicing.

I saw the studs of garlic injected into the roast in the picture so I did the same and then followed the recipe. Turned out med-rare just like we like it and was so delicious and real tender. Superb roast!

Bravo Linda! My husband and I both agree, this is the best beef roast I've ever made. The star of this recipe is the meat, which wasn't masked by spices or heavy sauces. The gravy was rich with flavor. My roast was 4 pounds and it cooked to a perfect medium rare at 1 hour and 50 minutes. Thank you our new Thanksgiving tradition.
