Step by Step Method

Step 1

Preheat oven to 350 degrees. Grease a 9x13 inch pan.

Step 2

In a large mixing bowl cream butter and sugars until craamy.

Step 3

Add egg, peanut butter, baking soda, salt and vanilla. Mix well.

Step 4

Add flour, oats and nuts. Mix in well.

Step 5

Spread mix evenly into pan, and bake for 18-20 minutes, or until golden brown.

Step 6

Take out of oven and sprinkle chocolate chips evenly over the top. As they melt, spread with a knife all over the top. Set aside to cool.

Step 7

In a medium size mixing bowl add confectionary sugar, peanut butter and 2 tablespoons of milk. Mix until smooth, adding the last tablespoon of milk, if needed, to make it creamy but not runny.

Engrossed

This one sounded wonderful to me, but didn't turn out to our tastes. Something about the texture of the old-fashioned oats and too many pecans...along with not being sweet enough or peanutbuttery enough. I think maybe if the oats and nuts were ground, and some honey was added, it may be improved. This did taste like a healthy snack bar, so still may appeal to others as is. I used butter and Splenda for the white sugar. Freddy Cat says thanks for the sweets! Made for the Billboard recipe tag game.
