" After the holidays it seemss that there are a lot of leftovers that want to be used up. I wanted something a little lighter on calories and carbs so I put this recipe together. Ham isn't the best because of the high sodium but I omitted salt from the recipe to balance it. Add more or less salsa. I like veggies with some crunch left so if you like your veggies well done cook them longer. Add whatever vegetables that you have just pre cook them."

Step by Step Method
Step 1
Bring 4 cups of water to a rolling boil, add carrots cook for 2 minutes, add cauliflower continue cooking for 2 more minutes, add leek continue cooking for 1 further minute Total time 5 minutes).
Step 2
Drain well and immerse in cold water for a minute or two, drain well.
Step 3
Place the veggies in a lightly oil sprayed oven proof casserole dish
Step 4
Add all the remaining ingredients, gently mix all the ingredients
Step 5
Cover with foil and place in preheated 375 oven for 30 minutes
