Ingredients

The ingredients are:
  • 2 cups diced ham
  • 1 cup carrots, cut in 1" pieces
  • 1 leek, cleaned, white part only, cut in 1" slices
  • 2 cups cauliflower, broken into small florets
  • 3 garlic cloves, sliced thinly
  • 1/2 cup peas, frozen (optional)
  • 4 medium mushrooms, quartered
  • 1 1/4 cup salsa, your choice hot, medium or mild

How to Make

  • Step 1: Bring 4 cups of water to a rolling boil, add carrots cook for 2 minutes, add cauliflower continue cooking for 2 more minutes, add leek continue cooking for 1 further minute Total time 5 minutes).

  • Step 2: Drain well and immerse in cold water for a minute or two, drain well.

  • Step 3: Place the veggies in a lightly oil sprayed oven proof casserole dish

  • Step 4: Add all the remaining ingredients, gently mix all the ingredients

  • Step 5: Cover with foil and place in preheated 375 oven for 30 minutes
