Step by Step Method

Step 1

Using a large skillet heat the 2 tablespoons of oil over medium high heat. Add onions and saute until softened (about 3 minutes). Stir in the mushrooms and continue to cook over medium-high heat until mushrooms are soft, about 7-8 minutes. Add the garlic and cook until fragrant, about 1 minute

Step 2

Add the butter and pour in the lemon juice. Stir well, until the butter is completely melted. Add the chicken broth, salt and pepper. Let the sauce simmer until slightly thickened (about 8-10 minutes). Cover and keep warm until ready to use.

I tripled the sauce to make 1 cup of juice, then I added it to rice that I made using 1 cup less of water while making the rice. I let the sauce and mushrooms sit in with the rice on low during the last 15 minutes of cooking, and then let it sit on the stove for a few minutes to let the liquid absorb into the rice. It was really delicious and really enhanced the flavor of the rice!

5 star plus. The sauce has a subtle lemon flavour and was perfect over chicken. I rubbed chicken thighs with salt, pepper, rosemary and thyme. Made the sauce while I baked the thighs in 375 oven for 15 minutes. Poured the sauce over the thighs and continued baking for an other 30 minutes - Heavenly chicken. This sauce will be made over and over again.

Very nice sauce that really enhanced the flavour of our pork patties!! It will make a good all purpose savoury sauce, i'm sure i'll make again many times on different foods. Love the lemon flavour!
