Step 1

Heat the olive oil in a large nonstick frypan over medium high heat. Add carrot, and saute for 2 minutes.

Step 2

Stir in broth, rind, juice, celery salt and 1/4 teaspoon black pepper. Cover, reduce heat to medium low and cook for 10 minutes or until tender, stirring

Step 3

Remove from heat, stir in dill.

Easy tasty, lovely presentation. I had to use dry dill weed - it will be prettier with fresh but the flavour was still there. I used celery seed instead of celery salt. A do again recipe for sure.
