Step 1

Heat olive oil in a large soup pot over medium heat.

Step 2

Add onions, carrots, celery and garlic.

Step 3

Cook and stir until veggies begin to soften, about 5 minutes.

Step 4

Add thyme, marjoram, tarragon and turmeric; mix well.

Step 5

Add broth, lemon juice, bay leaves, lemon zest, salt and pepper; bring to a boil.

Step 6

Reduce heat to low, cover and simmer for 5 minutes.

Step 7

Add orzo and simmer for 5 more minutes.

Step 8

Add chicken and simmer 5 more minutes.

Step 9

Remove from heat and stir in parsley.

Step 10

Serve hot.

This sure was a tasty soup...I forgot to tell the hubby that it was a lemon chicken soup...and the first thing out of his mouth was...Wow...this sure has a lot of lemon in it...he really did enjoy it...I cut the recipe in half for the two of us and we both enjoyed the leftovers for lunch...the only thing I omitted was the turmeric...I thought I had some...but sure couldn't locate it in my spice cabinet...made for Bill Board tag game...

This is very hearty and warming on a chilly day. Loved the lemon and always glad to use marjoram, which is underutilized in home recipes, IMHO.
