Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 1/2 cups chopped onions
  • 1 cup celery, diced
  • 1 cup carrots, diced
  • 1 teaspoon minced garlic
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon dried tarragon
  • 1/4 teaspoon ground turmeric
  • 6 cups chicken broth (low sodium)
  • 1/4 cup lemon juice (freshly squeezed)
  • 2 bay leaves
  • 2 teaspoons grated lemon zest
  • 1/2 teaspoon sea salt (or salt alternative)
  • 1/4 teaspoon freshly ground black pepper
  • 70 grams dry orzo pasta (uncooked 1/2 cup, or rice for GF)
  • 250 grams cooked chicken (chopped, 2 cups)
  • 1/4 cup chopped parsley (fresh)

How to Make

  • Step 1: Heat olive oil in a large soup pot over medium heat.

  • Step 2: Add onions, carrots, celery and garlic.

  • Step 3: Cook and stir until veggies begin to soften, about 5 minutes.

  • Step 4: Add thyme, marjoram, tarragon and turmeric; mix well.

  • Step 5: Add broth, lemon juice, bay leaves, lemon zest, salt and pepper; bring to a boil.

  • Step 6: Reduce heat to low, cover and simmer for 5 minutes.

  • Step 7: Add orzo and simmer for 5 more minutes.

  • Step 8: Add chicken and simmer 5 more minutes.

  • Step 9: Remove from heat and stir in parsley.

  • Step 10: Serve hot.
