"Awhile back friends invited us to a Sunday lunch, seeing we had late services I was impressed to see a platter of elegant looking chicken breasts out of oven in just half an hour! What was even more of a surprise was her GLUTEN FREE chicken was so good I begged the recipe. The recipe asks for finely crushed Rice Krispies, but find having it less crushed makes awesome looking chicken. For gluten free she used the gluten free flour and the gluten free rice krispies. For ourselves I use the all purpose flour and the regular Rice Krispies - unless gluten free friends join us!"

Step by Step Method

Step 1

In a shallow bowl combine crushed Rice Krispies, flour, salt, thyme, and poultry seasoning stir to mix. Place melted butter in a second bowl

Step 2

Dip chicken into butter then into the cereal mixture, place in greased 11 - 7 x2 inch baking pan (or one of similar size)

Step 3

Drizzle with the remaining melted butter (you may need more)

Step 4

Bake uncovered in 400 degree oven (ovens vary - I use 375 ) for 25 - 30 minutes or until juices run clear

I made this on the BBQ over indirect heat and it was so tasty, it cooked up in 35 minutes. Nice and tender and juicy. I did not use the gluten free options. made for the Billboard Recipe Tag Game. *Made this again May 31st 2013, this time with the gluten free options and doubling the thyme and poultry. It was divine*
