"Just wait until you taste this chicken!!! There is enough bread crumb mix for two or even three recipes depending on how much you use for top of the chicken, if you have any leftover just place in a ziploc bag and refrigerate to use again the next time you make this. I have only made this using boneless skinless chicken breasts but I'm sure it you work great using skin on chicken. NOTE; to avoid moisture gathering in the bottom of the pan I suggest using fresh and not frozen-thawed chicken for this! For a quick weekday meal, the day or night before, prepare until step 5, place the pan in the fridge and refrigerate until you are ready to bake it, just sprinkle on the crumb mixture before baking and bake as directed. Step by Step Method

Step 1

Preheat oven to 350 degrees. Place oven rack to lowest position.

Step 2

Grease a large baking sheet.

Step 3

Place the breasts on baking sheet. Pat-dry the tops of the breasts using paper towels.

Step 4

In a medium bowl combine all breadcrumb mixture until well blended.

Step 5

In a bowl combine 1/2 cup mayonnaise, 1/3 cup Parmesan cheese, 1 teaspoon garlic powder and 1/4 teaspoon pepper until well combined.

Step 6

Using a small basting brush, generously and evenly brush the tops and sides of the breasts with mayonnaise mixture, (if you have any left over then coat the bottom of the breasts also). Then using a spoon generously and evenly sprinkle the breadcrumb mixture over the tops of all the breasts.

Step 7

Bake for 35-40 minutes or until cooked through (remember the chicken continues to cook even after removing from the oven).

Step 8

Sprinkle mozzarella cheese over the top and around the breasts. Place until broiler and broil just enough to melt the cheese.

Step 9

Using a spatula remove the breasts and cheese from the pan to plate/s.

Step 10
