Ingredients

The ingredients are:
  • 6 large boneless skinless chicken breasts
  • 3/4 cup mayonnaise
  • 1/4 to 1/4 cup Parmesan cheese, grated
  • 1 teaspoon garlic powder
  • 1/4 teaspoon ground pepper
  • Mozzarella cheese (shredded, use as much as you want -- this is optional you don't have to use the cheese)
  • BREADCRUMB MIXTURE
  • 2 cups dry breadcrumbs (must be dry)
  • 1/3 cup Parmesan cheese, grated
  • 1 1/2 tablespoons garlic powder
  • 1 1/2 tablespoon onion powder
  • 1/2 teaspoon dry Italian seasoning (rubbed)
  • 1 teaspoon salt (seasoning salt)
  • 1/2 teaspoon ground pepper
  • 1/4 teaspoon cayenne pepper

How to Make

  • Step 1: Preheat oven to 350 degrees. Place oven rack to lowest position.

  • Step 2: Grease a large baking sheet.

  • Step 3: Place the breasts on baking sheet. Pat-dry the tops of the breasts using paper towels.

  • Step 4: In a medium bowl combine all breadcrumb mixture until well blended.

  • Step 5: In a bowl combine 1/2 cup mayonnaise, 1/3 cup Parmesan cheese, 1 teaspoon garlic powder and 1/4 teaspoon pepper until well combined.

  • Step 6: Using a small basting brush, generously and evenly brush the tops and sides of the breasts with mayonnaise mixture, (if you have any left over then coat the bottom of the breasts also). Then using a spoon generously and evenly sprinkle the breadcrumb mixture over the tops of all the breasts.

  • Step 7: Bake for 35-40 minutes or until cooked through (remember the chicken continues to cook even after removing from the oven).

  • Step 8: Sprinkle mozzarella cheese over the top and around the breasts. Place until broiler and broil just enough to melt the cheese.

  • Step 9: Using a spatula remove the breasts and cheese from the pan to plate/s.

  • Step 10: Enjoy, and enjoy you will because this is so good!
