"This is more of a method than a recipe you can really do this with any of your favorite manicotti filling recipe. Do not cook the shells and do not use the no-boil, the shells will cook in the sauce. When ready to make the manicotti remove from the freezer, place in the microwave until semi thawed then bake, I do this often, it's so nice to have them freezer-ready to cook, I keep my homeamde pasta sauce in the freezer to use for these purchased is fine whatever you like to use. Step by Step Method

Step 1

To save some time you may want to cook the sausage meat a day ahead. Prepare the filling ingredients on the recipe (Step 4).

Step 2

In a very large bowl Prepare/mix the filling ingredients as stated on the recipe.

Step 3

Using clean hands stuff the uncooked shells with filing.

Step 4

Place onto a baking sheet, then place in the freezer until completely. When completely frozen transfer to a freezer bag.

Step 5

When ready to cook; remove as many manicotti as you want from the freezer, place in the microwave and partially thaw (about 3 minutes, do not thaw completely).

Step 6

Generouldy coat the bottom of a greased baking dish with pasta sauce (how much you use will depend on the size of your baking dish).

Step 7

Place the partially thawed manicotti shells in one layer in the dish; pour a generous amount of pasta sauce over the shells (shells must be completely covered with sauce) sprinkle with a small amount of mozzarella cheese (you will add on more after baking).

Step 8

Cover tightly with foil, then bake in a preheated 375 degree F oven (bottom rack) for 50-60 minutes or until the shells are fork-tender (mine usually take about 50 minutes) remove sprinkle with more cheese and return to oven for another 5 minutes to melt the cheese.
