Step 1: To save some time you may want to cook the sausage meat a day ahead. Prepare the filling ingredients on the recipe (Step 4).
Step 2: In a very large bowl Prepare/mix the filling ingredients as stated on the recipe.
Step 3: Using clean hands stuff the uncooked shells with filing.
Step 4: Place onto a baking sheet, then place in the freezer until completely. When completely frozen transfer to a freezer bag.
Step 5: When ready to cook; remove as many manicotti as you want from the freezer, place in the microwave and partially thaw (about 3 minutes, do not thaw completely).
Step 6: Generouldy coat the bottom of a greased baking dish with pasta sauce (how much you use will depend on the size of your baking dish).
Step 7: Place the partially thawed manicotti shells in one layer in the dish; pour a generous amount of pasta sauce over the shells (shells must be completely covered with sauce) sprinkle with a small amount of mozzarella cheese (you will add on more after baking).
Step 8: Cover tightly with foil, then bake in a preheated 375 degree F oven (bottom rack) for 50-60 minutes or until the shells are fork-tender (mine usually take about 50 minutes) remove sprinkle with more cheese and return to oven for another 5 minutes to melt the cheese.
