Kathleen's Carrot Spice Muffins
"This is a great recipe to have ready for times when you want a fairly healthy muffin fast. It uses only one egg and has 1 1/2 cups of carrots in it. Don't be put off by the long list of ingredients; there are 4 different spices in these."

Step by Step Method
Step 1
Preheat oven to 400 degrees F
Step 2
Mix together flours, baking soda, baking powder, and the four spices in a large mixing bowl. (Spices may be doubled if you prefer )Stir well to combine.
Step 3
In a smaller bowl, stir together the sugar, egg, buttermilk, oil and vanilla and mix well. Add this into the flours.
Step 4
Add grated carrots and dried fruit and nuts and mix briefly until just combined.
Step 5
Spoon into prepared muffin tins. Bake 15-18 minutes.
