The ingredients are:
  • 1 cup flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon powdered ginger
  • 1/2 teaspoon allspice
  • 1/2 cup packed brown sugar
  • 1 tablespoon packed brown sugar
  • 1 egg
  • 1/2 cup buttermilk (or soured milk)
  • 1/3 cup oil
  • 1/2 teaspoon vanilla
  • 1 1/2 cups carrots, grated
  • 1/2 cup raisins (or dried cranberries)
  • 1/2 cup chopped nuts (optional)

How to Make

  • Step 1: Preheat oven to 400 degrees F

  • Step 2: Mix together flours, baking soda, baking powder, and the four spices in a large mixing bowl. (Spices may be doubled if you prefer )Stir well to combine.

  • Step 3: In a smaller bowl, stir together the sugar, egg, buttermilk, oil and vanilla and mix well. Add this into the flours.

  • Step 4: Add grated carrots and dried fruit and nuts and mix briefly until just combined.

  • Step 5: Spoon into prepared muffin tins. Bake 15-18 minutes.
