Kale With Onions & Smoked Sausage

"I just threw this recipe together mainly to use up some kale. It has gone crazy in the garden this year. The result was a tasty dish so I decided to write out the recipe. I like to freeze the kale for 45 minutes but it is not necessary. Use a nice spicy smoked sausage. It is not authentic German but leans heavily that way. A drizzle of Balsamic vinegar just before serving is nice."

Step by Step Method

Step 1

Heat the oil (medium heat) in a large wok or skillet.

Step 2

Add onion, cook, stirring frequently until golden (15 minutes).

Step 3

Add kale & sausage.

Step 4

Lower heat slightly.

Step 5

Season with salt & pepper.

Step 6

Cover & cook for apprx. 30 minutes.

Step 7

Stir frequently.

Thanks for this good tasting idea. I'll make this again for sure. I'm a little clueless when it comes to fresh produce. I bought a 1 pound bag of organic kale. I used a fourth of it. No problem there; I can make smoothies with the rest. I made this for the Alphabet Soup recipe tag game in the forums.
