Step 1: Heat the oil (medium heat) in a large wok or skillet.
Step 2: Add onion, cook, stirring frequently until golden (15 minutes).
Step 3: Add kale & sausage.
Step 4: Lower heat slightly.
Step 5: Season with salt & pepper.
Step 6: Cover & cook for apprx. 30 minutes.
Step 7: Stir frequently.
