  • 1 pound kale (apprx 10 stems, stems removed, chopped)
  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 8 ounces smoked sausage (cut into 1/2 inch slice)
  • Salt & pepper as desired

How to Make

  • Step 1: Heat the oil (medium heat) in a large wok or skillet.

  • Step 2: Add onion, cook, stirring frequently until golden (15 minutes).

  • Step 3: Add kale & sausage.

  • Step 4: Lower heat slightly.

  • Step 5: Season with salt & pepper.

  • Step 6: Cover & cook for apprx. 30 minutes.

  • Step 7: Stir frequently.
