Step by Step Method

Step 1

Cook pasta per package instructions (just until al dente). Reserve about 1/2 cup of pasta water. Drain pasta, transfer to a bowl, and toss with some olive oil. Set aside.

Step 2

In a large saucepan, heat olive oil & butter over medium heat.

Step 3

When the butter begins to bubble, add in the garlic and cook until fragrant – about one minute.

Step 4

Add in the shiitake mushrooms and cook for 2-3 minutes. Then add in the shimeiji mushrooms and continue to cook until caramelized – another 3-4 minutes.

Step 5

Add in the sake, and cook for another minute. Add in the cooked pasta along with 1/4 cup of pasta water.

Step 6

Season with soy sauce and mirin, toss pasta to coat well. If you find the pasta a little dry, you can add in one or two more tablespoons of pasta water.

Step 7

Dish out into individual plates. Top with scallion

Simple but oh so delicious I used dry shitakes (1.5 ounces) which I reconstituted in warm water and ended up with 5.25 ounces once stem was removed and also used some of the soaking liquid to add extra flavour, the end result was a delicious dinner, thank you dienia b, made for Alphabet Tag Game at FF&F.
