"I love roasted jalapeños. Usually when I BBQ I throw a bunch on the barbecue and then saved them in a jar cover with olive oil."

Step 1

Preheat the oven to 400. Place whole jalapeños on a baking dish and bake.

Step 2

Cut chicken breast in half, you will get 2 thin steaks out of each breast.

Step 3

Place a strip of cheese down the center of each chicken breast half.

Step 4

Get the jalapeños out of the oven, cut in halve, scrape the seeds and put one half on top of each cheese slice.

Step 5

Roll chicken over and secure with toothpicks.

Step 6

Mix garlic salt, cumin and chili in a small bowl and sprinkle all over the chicken rolls

Step 7

In a large skillet,slowly brown chicken in olive oil. You want the inside to be cooked and the cheese not to drip.

Step 8

Discard toothpicks. Serve.

This is a fantastic chicken recipe that will be made often here, YUM!!! I used 3 chicken breasts and I butterflied them instead of cutting them in half and followed the recipe as listed. I served these up with rice and it made for a tasty dinner. Thx for sharing your recipe here.

We really enjoyed the flavor of this dish...I did miss the cooking time...I think my jalapeno should have stayed in the oven longer...it wasn't very easy to roll up...I had to fold the cheese to fit the chicken...next time I might pound the chicken to flatten it a bit...I felt there wasn't enough spice mixture to cover the chicken...so I would suggest doubling the spice mixture...made for "Bill Board" tag game...
