Step by Step Method
Step 1
Heat olive oil in a large stockpot.
Step 2
Add fresh garlic, fresh ginger, celery, mushrooms and onion and cook for 4 minutes.
Step 3
Add spices and cook for an additional 4 minutes, stirring often.
Step 4
Add the chicken broth, bouillon, chicken, and carrots, bay leaf and parsley.
Step 5
Bring to a boil.
Step 6
Reduce heat and simmer for 60 minutes.
Step 7
Take out Bay leaf and chicken.
Step 8
Debone chicken and chop and add it back into soup.
Step 9
Add spinach and let cook for 5 minutes just before serving.
