Step by Step Method
Step 1
Sprinkle the chicken with 1/2 tsp salt and 1/2 tsp pepper.
Step 2
Place 1/2 cup all-purpose flour in a shallow dish.
Step 3
Stir together the crushed crackers, baking powder, and remaining 1/4 cup flour in a second shallow dish.
Step 4
Whisk together the eggs and hot sauce in a third shallow dish.
Step 5
Dredge the chicken in flour, dip in the egg mixture, and dredge in the cracker mixture, pressing to adhere.
Step 6
Pour oil to a depth of 1 inch into a 10 inch cast-iron skillet; heat to 360º. Fry half the chicken 3 to 4 minutes. Turn and fry 2-3 minutes or until golden brown and done. Repeat the procedure with the remaining chicken.
Step 7
Stir together the sour cream, sugar, and the remaining 1 tsp salt and 1/4 tsp pepper. Toss together the coleslaw mix, pickled okra, diced pimento and sour cream mixture. Serve the slaw and chicken with additional hot sauce on the side.
