Ingredients

The ingredients are:
  • 1 1/2 pounds chicken breast cutlets (6 4-oz cutlets)
  • 1 1/2 teaspoons salt, divided
  • 1/4 teaspoon pepper, divided
  • 1 1/4 cups all-purpose flour
  • 30 crackers, Saltine, crushed
  • 1/2 teaspoon baking powder
  • 2 eggs, large, lightly beaten
  • 1/3 cup hot sauce
  • Peanut oil
  • 1/2 cup sour cream
  • 1/2 teaspoon sugar
  • 16 ounces coleslaw mix (1 package)
  • 1/2 cup okra, pickled, sliced
  • 4 ounces pimentos, diced, drained (1 jar)

How to Make

  • Step 1: Sprinkle the chicken with 1/2 tsp salt and 1/2 tsp pepper.

  • Step 2: Place 1/2 cup all-purpose flour in a shallow dish.

  • Step 3: Stir together the crushed crackers, baking powder, and remaining 1/4 cup flour in a second shallow dish.

  • Step 4: Whisk together the eggs and hot sauce in a third shallow dish.

  • Step 5: Dredge the chicken in flour, dip in the egg mixture, and dredge in the cracker mixture, pressing to adhere.

  • Step 6: Pour oil to a depth of 1 inch into a 10 inch cast-iron skillet; heat to 360º. Fry half the chicken 3 to 4 minutes. Turn and fry 2-3 minutes or until golden brown and done. Repeat the procedure with the remaining chicken.

  • Step 7: Stir together the sour cream, sugar, and the remaining 1 tsp salt and 1/4 tsp pepper. Toss together the coleslaw mix, pickled okra, diced pimento and sour cream mixture. Serve the slaw and chicken with additional hot sauce on the side.
