Hot Italian & Spinach Burger
"This burger is spicy and loaded with flavour. The tomato pesto is just right on the burger. Use provolone cheese or Swiss, your preference. The garlic/anchovy spinach is a nice addition from your usual toppings If you don't like spicy mix half & half hot & mild Italian sausages. The original recipe is from "Food & Wine" with some modifications by me"

Step by Step Method
Step 1
Form the sausage meat into 4 patties about 1/2 inch thick, set aside
Step 2
Add 1/4 inch of water to a large skillet, bring to a boil
Step 3
Add spinach, cook until wilted (apprx 1 minute)
Step 4
Drain and squeeze out as much water as possible
Step 5
In the same skillet heat 2 tablespoons olive oil
Step 6
When the oil hot add garlic and anchovey paste, stir, cook about 1 minute
Step 7
Add the spinach, season with salt, stir until just coated, about 10 seconds, keep warm
Step 8
Brush the patties with oil and pan fry
Step 9
Cook over medium high heat apprx. 5 minutes each side
Step 10
They should be brown & crusty on each side
Step 11
Top with the cheese before they are finished cooking so the cheese starts to melt
Step 12
Spread 2 tablespoons of pesto on the buns,1 tablespoon each side of the bun add burgers
Step 13
Top the burgers with the warm spinach
