Ingredients

The ingredients are:
  • 10 ounces fresh baby spinach
  • 2 tablespoons oil (extra virgin olive oil)
  • 2 large garlic cloves, minced
  • 1 teaspoon anchovy (paste, Optional)
  • Salt to taste
  • 1 pound Italian sausages (hot Italian sausage links, casings removed)
  • 4 provolone cheese slices
  • 8 tablespoons sun-dried tomato pesto
  • 4 ciabatta rolls (or kaiser rolls, split & toasted)

How to Make

  • Step 1: Form the sausage meat into 4 patties about 1/2 inch thick, set aside

  • Step 2: Add 1/4 inch of water to a large skillet, bring to a boil

  • Step 3: Add spinach, cook until wilted (apprx 1 minute)

  • Step 4: Drain and squeeze out as much water as possible

  • Step 5: In the same skillet heat 2 tablespoons olive oil

  • Step 6: When the oil hot add garlic and anchovey paste, stir, cook about 1 minute

  • Step 7: Add the spinach, season with salt, stir until just coated, about 10 seconds, keep warm

  • Step 8: Brush the patties with oil and pan fry

  • Step 9: Cook over medium high heat apprx. 5 minutes each side

  • Step 10: They should be brown & crusty on each side

  • Step 11: Top with the cheese before they are finished cooking so the cheese starts to melt

  • Step 12: Spread 2 tablespoons of pesto on the buns,1 tablespoon each side of the bun add burgers

  • Step 13: Top the burgers with the warm spinach

  • Step 14: Enjoy
