Step 1: Form the sausage meat into 4 patties about 1/2 inch thick, set aside
Step 2: Add 1/4 inch of water to a large skillet, bring to a boil
Step 3: Add spinach, cook until wilted (apprx 1 minute)
Step 4: Drain and squeeze out as much water as possible
Step 5: In the same skillet heat 2 tablespoons olive oil
Step 6: When the oil hot add garlic and anchovey paste, stir, cook about 1 minute
Step 7: Add the spinach, season with salt, stir until just coated, about 10 seconds, keep warm
Step 8: Brush the patties with oil and pan fry
Step 9: Cook over medium high heat apprx. 5 minutes each side
Step 10: They should be brown & crusty on each side
Step 11: Top with the cheese before they are finished cooking so the cheese starts to melt
Step 12: Spread 2 tablespoons of pesto on the buns,1 tablespoon each side of the bun add burgers
Step 13: Top the burgers with the warm spinach
Step 14: Enjoy
