Step 1

Preheat oven to 450 degrees.

Step 2

Cut the potatoes in quarters the long way and score almost through to the peel, so the potatoes fan open.

Step 3

Line the bottom of a roasting pan with the potatoes.

Spread the horseradish evenly in the chickens cavity

Balance the bird breast up on top of the potatoes

Sprinkle oil lightly on top

And sprinkle with paprika and black pepper.

Place pan in the oven, and immediately turn the heat down to 325 degrees.

Roast until the potatoes are golden and the chicken is cooked well all the way through.about 2 hours . check
