Ingredients

  • 4 pounds whole raw chicken
  • 2 pounds potatoes
  • 2 tablespoons prepared horseradish
  • 3 tablespoons oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper, to taste

How to Make

  • Step 1: Preheat oven to 450 degrees.

  • Step 2: Cut the potatoes in quarters the long way and score almost through to the peel, so the potatoes fan open.

  • Step 3: Line the bottom of a roasting pan with the potatoes.

  • Step 4: Spread the horseradish evenly in the chickens cavity

  • Step 5: Balance the bird breast up on top of the potatoes

  • Step 6: Sprinkle oil lightly on top

  • Step 7: And sprinkle with paprika and black pepper.

  • Step 8: Place pan in the oven, and immediately turn the heat down to 325 degrees.

  • Step 9: Roast until the potatoes are golden and the chicken is cooked well all the way through.about 2 hours . check

  • Step 10: Let rest for 10 minutes;
