Step by Step Method

Step 1

Preheat oven to 400 degrees Fahrenheit.

Step 2

Clean and peel the carrots; set aside.

Step 3

Finely grind the rosemary with a mortar and pestle.

Step 4

Mix all the ingredients together in a large plastic bag making sure the carrots are well coated.

Step 5

Pour the contents of the bag onto a foil paper lined baking sheet in a single layer.

Step 6

Cook until just done, about 30 minutes depending on thickness of carrots, turning at least once.

Step 7

Enjoy!

We just love carrots, and this recipe doesn't disappoint! The cooking marinade is super good! I made these as written, except didn't go to Sprouts for the "fancy baby carrots" - just used the thinnest carrots I had and cut them into short sticks. These will definitely be made again! Thanks for sharing!

We loved the touch of sweetness that the honey gave these carrots...I subbed Dijon mustard for the grainy mustard...my hubby was raised on canned veggie's and has always disliked eating them fresh...well guess who is loving fresh cooked carrots now...I've been making so many lately I think I finally broke his love of the canned carrots...Made for "B'Zazzled" tag game...

O.M.G. We loved these. Served as a side to our Good Friday fish, everyone commented on how nice the carrots were. I found dutch carrots, which are the same as gourmet and made everything written, although I added some whole mustard as well. Just a wonderful recipe and so easy to make. Thanks Bea

We really enjoyed these carrots! The flavour of the "marinade" is delicious. I was not able to get the baby carrots at this time of year, so used the thinnest ones I had. Had to adjust cooking time a wee bit. Will be making these again for sure! Made for Billboard Recipe Tag.

Like Bergy I didn't find the gourmet carrots with the tiny ends either,the baby carrots I found resulted in a lovely lovely carrot dish. The recipe has been added to our Family Cookbook along side our family fav. We do love our carrots and this is another great way to serve them!
