  • 12 ounces carrots (fancy baby carrots)
  • 2 tablespoons oil (vegetable oil)
  • 1 tablespoon honey
  • 1 tablespoon yellow mustard (old fashioned grainy mustard)
  • 1 teaspoon dried rosemary
  • 2 cloves garlic, pressed
  • Salt, to taste

How to Make

  • Step 1: Preheat oven to 400 degrees Fahrenheit.

  • Step 2: Clean and peel the carrots; set aside.

  • Step 3: Finely grind the rosemary with a mortar and pestle.

  • Step 4: Mix all the ingredients together in a large plastic bag making sure the carrots are well coated.

  • Step 5: Pour the contents of the bag onto a foil paper lined baking sheet in a single layer.

  • Step 6: Cook until just done, about 30 minutes depending on thickness of carrots, turning at least once.
