Step by Step Method

Step 1

Place carrots in a saucepan and just cover with water. Bring to a boil, and reduce heat to medium. Cook 5-7 minutes, or just till slightly tender.

Step 2

In a small bowl, whisk together honey, mustard, cumin and cinnamon. Drain carrots and return to pan. Over low heat, add butter, salt, pepper and honey-mustard mixture, and heat till butter is melted. Stir to mix sauce with carrots. Garnish with parsley is desired.

We really did enjoy these carrots with our roast last week. I did add some seeded mustard and chopped parsley as well to the recipe, and that is the only change I made. The spice & mustard really added a lovely flavor to the carrots, they were sweet and yet had a hint of savory to them. Just a perfect dish that would compliment just about anything you served it with. A winner here!

I scaled back for 3 serves but with other sides found it was a bit much so will do 2 serves for the 3 of us next time as they were so delicious and well such a large serve was not the best for my blood sugars but we thank you lovinretirement for a fantastic side for our lamb shanks, mashed potatoes and spinach.
