Step 1: Place carrots in a saucepan and just cover with water. Bring to a boil, and reduce heat to medium. Cook 5-7 minutes, or just till slightly tender.
Step 2: In a small bowl, whisk together honey, mustard, cumin and cinnamon. Drain carrots and return to pan. Over low heat, add butter, salt, pepper and honey-mustard mixture, and heat till butter is melted. Stir to mix sauce with carrots. Garnish with parsley is desired.
