"Another hominy recipe from Glenna Snow's Cook Book, published in 1936 and 1944 is a true reflection of the depression era and WW2 era when cooks were resourceful. This hominy recipe unlike Hominy Casserole #1 contains no dairy and seems to be intended as a side dish. This recipe does not state measurements or amounts, but these measurements are what I use. Step by Step Method
Step 1
Mix the onion, green pepper, and tomatoes together in a small bowl. In bottom of greased casserole put a layer(I use one can)of drained hominy then half of onion/peppers/tomatoe mixture.
Step 2
Sprinkle first layers with salt and pepper to taste and repeat layers ending with onion/peppers/tomatoes.
Step 3
Sprinkle a few bread crumbs over the top and dot with butter. Bake in a moderate (350 degrees F.)oven for about 30 minutes until done. Serve hot.
