Ingredients

The ingredients are:
  • 2-15 ounce cans hominy (original recipe does not state amount but this is what I use)
  • 1 tablespoonful onion, minced
  • 1 tablespoonful green pepper, minced
  • 1/3 to 1/2 cup tomatoes, canned and undrained
  • 1/3 to 1/2 cup bread crumbs
  • Salt and black pepper to taste
  • 2 tablespoons butter

How to Make

  • Step 1: Mix the onion, green pepper, and tomatoes together in a small bowl. In bottom of greased casserole put a layer(I use one can)of drained hominy then half of onion/peppers/tomatoe mixture.

  • Step 2: Sprinkle first layers with salt and pepper to taste and repeat layers ending with onion/peppers/tomatoes.

  • Step 3: Sprinkle a few bread crumbs over the top and dot with butter. Bake in a moderate (350 degrees F.)oven for about 30 minutes until done. Serve hot.
