Step 1: Mix the onion, green pepper, and tomatoes together in a small bowl. In bottom of greased casserole put a layer(I use one can)of drained hominy then half of onion/peppers/tomatoe mixture.
Step 2: Sprinkle first layers with salt and pepper to taste and repeat layers ending with onion/peppers/tomatoes.
Step 3: Sprinkle a few bread crumbs over the top and dot with butter. Bake in a moderate (350 degrees F.)oven for about 30 minutes until done. Serve hot.
