Step 1

Melt butter in a large skillet over medium-low heat; stir in brown sugar, salt, and pepper. Arrange onion slices in a single layer over the butter mixture in the skillet. Sprinkle with chopped celery, cover, and cook 10 minutes.

Step 2

Turn onion slices over; sprinkle with parsley, Parmesan, and oregano. Cover and cook another 10 minutes or until the onions are tender.

Oh my gosh - excellent side dish! I used Vidalia onions, so sweet and good! I combined the parmesan, parsley and oregano in a small bowl, then sprinkled it over the onion slices as directed. They developed a delicious crust! I served these as a side dish, but when I described these to a coworker, she suggested serving them on a burger - and I think that's a great idea! The only caution is that the slices are kind of hard to turn, because the rounds want to slip out and about when you lift them. So use a spatula and a fork to keep them tamed!
