Step by Step Method

Step 1

Cook potatoes in boiling water for 5 minutes; drain.

Step 2

Place potatoes in a shallow baking dish; set aside.

Step 3

Meanwhile, melt butter in a skillet. Once melted and hot, add onions, celery and parsley for a few minutes until onions and celery are cooked through and translucent.

Step 4

Stir in seasonings.

Step 5

Pour vegetable mixture over potatoes and distribute evenly. Taste and adjust seasoning if necessary to suit your taste.

Step 6

Place in oven and bake for 30 minutes.

NOTE: This dish can be made ahead up to the point that both vegetables and potatoes are placed in the casserole. Refrigerate and bake at a later time up to 24 hours ahead

I really enjoyed these potatoes. They were simple and the seasoning was great. It dawned on me when I got a whiff of the poultry seasoning that I don't use it often except during the holidays. It was a nice touch. Thanks for sharing, Nat.

These potatoes taste great and are so easy to make because I normally have everything I need to make them. Only thing I might do differently is turn the broiler on at the end to crisp them up a bit. I wasn't sure what temp to bake these at, so I picked 350 and that worked perfectly.

Made using a selection from my garden grown potatoes, they are delicious, definitely a company worthy side dish. Love make a heads, they are great for weekends. Can't wait to serve this potato dish to family and friends!

What a great way to prepare potatoes. I made this for a late breakfast (brunch, I guess), and it worked out quite well. It's a great recipe as written, and I can't think of a thing to suggest to improve the recipe. I'll make this again as written and won't adjust a single ingredient. Thanks, ForeverMama.
