Ingredients

The ingredients are:
  • 8 cups potatoes, diced
  • 1/2 cup butter
  • 1 yellow onion, minced
  • 1 cup celery, chopped (including leaves)
  • 1/2 cup parsley
  • 2 1/2 to 3 teaspoons poultry seasoning
  • 1/4 teaspoon freshly ground black pepper
  • Salt, to taste

How to Make

  • Step 1: Cook potatoes in boiling water for 5 minutes; drain.

  • Step 2: Place potatoes in a shallow baking dish; set aside.

  • Step 3: Meanwhile, melt butter in a skillet. Once melted and hot, add onions, celery and parsley for a few minutes until onions and celery are cooked through and translucent.

  • Step 4: Stir in seasonings.

  • Step 5: Pour vegetable mixture over potatoes and distribute evenly. Taste and adjust seasoning if necessary to suit your taste.

  • Step 6: Place in oven and bake for 30 minutes.

  • NOTE: This dish can be made ahead up to the point that both vegetables and potatoes are placed in the casserole. Refrigerate and bake at a later time up to 24 hours ahead
