Step 1: Cook potatoes in boiling water for 5 minutes; drain.
Step 2: Place potatoes in a shallow baking dish; set aside.
Step 3: Meanwhile, melt butter in a skillet. Once melted and hot, add onions, celery and parsley for a few minutes until onions and celery are cooked through and translucent.
Step 4: Stir in seasonings.
Step 5: Pour vegetable mixture over potatoes and distribute evenly. Taste and adjust seasoning if necessary to suit your taste.
Step 6: Place in oven and bake for 30 minutes.
