Step by Step Method

Step 1

Rub the chicken breasts with the seasoning blend, then in a large nonstick skillet, cook the chicken in 1 tablespoon of the oil over medium heat for 4 to 5 minutes on each side or until a meat thermometer reaches 170 degrees F. Remove the chicken breasts and keep them warm.

Step 2

In the same skillet, saute the onions in the remaining tablespoon of oil, then stir in the cranberries, broth, cranberry juice, syrup & vinegar.

Step 3

Bring this mixture to a boil, then reduce the heat, cooking and stirring for another 2 minutes, before returning the chicken to the skillet. Cook for another minute or so until chicken is heated through.

Step 4

Sprinkle with toasted nuts & serve.

Your recipe was made exactly as written except that my chicken breasts were extra-large (3 at 10-11 oz ea), so I cut them into lrg tenders & left all the other ingredients the same. This is a delicious easy-fix w/a ton of flavor & texture, but will also work extremely well w/leftover turkey. I served it w/baby potatoes & fresh green beans, but expect to see it again w/a side of bread stuffing during the holidays. Thx for sharing this recipe w/us.

Engrossed

Tasty! This was a simple healthy recipe with fancy results! I used two large fresh b/s chicken breasts which needed to cook a lot longer than stated...I had to put the lid on to get them cooked through. I used poultry seasoning, which I'm not sure was the best choice, and we love our salt, so I did add some and felt it needed it. I used diet cranberry juice, omitted the pecans and all else the same. I loved the dried cranberries and green onions in it. Freddy Cat says thanks for the chicken! Made for the Billboard recipe tag game.

I REALLY enjoyed this and definitely consider it suitable for a special occasion... The only change I would make is to greatly increase the amount of sauce. LOVE the sweet/sour taste. I did omit the pecan garnish and used finely chopped red onion in addition to the green. Served it over yellow rice (added turmeric to the water) for a very colorful AND delicious dinner.
