Ingredients

The ingredients are:
  • 4 boneless skinless chicken breasts (about 7 to 8 ounces each)
  • 1 tablespoon salt-free herb seasoning blend
  • 2 tablespoons extra virgin olive oil, divided
  • 2/3 cup chopped green onions
  • 2/3 cup dried cranberries
  • 1/2 cup reduced-sodium chicken broth
  • 1/3 cup cranberry juice
  • 4 1/2 teaspoons pure maple syrup
  • 1 tablespoon balsamic vinegar
  • 1/3 cup chopped pecans, toasted

How to Make

  • Step 1: Rub the chicken breasts with the seasoning blend, then in a large nonstick skillet, cook the chicken in 1 tablespoon of the oil over medium heat for 4 to 5 minutes on each side or until a meat thermometer reaches 170 degrees F. Remove the chicken breasts and keep them warm.

  • Step 2: In the same skillet, saute the onions in the remaining tablespoon of oil, then stir in the cranberries, broth, cranberry juice, syrup & vinegar.

  • Step 3: Bring this mixture to a boil, then reduce the heat, cooking and stirring for another 2 minutes, before returning the chicken to the skillet. Cook for another minute or so until chicken is heated through.

  • Step 4: Sprinkle with toasted nuts & serve.
