Herb-Baked Fish & Rice

"This recipe came from the "Great American Favorite Brand Name Cookbook The book is pretty old but has some great recipes. I happend to grab the wrong cookbook so looked through the recipes I had marked and found this one. If you like fish then this recipe may be one that goes into you keeper file!I It's easy to make and you can add most seasonings that ypu like. There are to ways two ways to make this recipe. Preheat oven to 375 dgrees
In an 8X 12 inch baking dish ( use glass) combine hot boullion, uncooked rice, and seasonings
Baked covered for 10 minutes
Top with broccoli, 1/2 of the Frence fried onions, and Parmesan cheese.
Stir rice and broccoli
Place fillets diagionally down the center of the dish and sprinkle with paprika
Bake covered at 375 degrees for 20 to 25 minutes or until fish flakes easily.
Top fish with cheddar cheese and remaining onions
Return to oven and bake another 3 mintes or unil cheese is melted
1 package Uncle Ben's rice pillaf (in the orange precooked package (omit the regular rice)
Omit the bouillon
Use frozen chopped broccoli or frozen mixed vegetables thawed and chopped
Italian seasoning if desired (sometimes I leave it out)
In the baking dish mix vegetables, Parmesan cheese, and rice
Bake covered for 10 minutes at 375 degrees
Remove from oven.
Lay fish diagonally down dish, cover with foil and bake for 20-25 Minutes or till fish flakes easily.
Remove from oven and sprinkle with onions and cheddar cheese (I use a little more cheddar cheese)
Return to oven uncovered and bake until cheese is melted.
