Step 1: Preheat oven to 375 dgrees
Step 2: In an 8X 12 inch baking dish ( use glass) combine hot boullion, uncooked rice, and seasonings
Step 3: Baked covered for 10 minutes
Step 4: Top with broccoli, 1/2 of the Frence fried onions, and Parmesan cheese.
Step 5: Stir rice and broccoli
Step 6: Place fillets diagionally down the center of the dish and sprinkle with paprika
Step 7: Bake covered at 375 degrees for 20 to 25 minutes or until fish flakes easily.
Step 8: Top fish with cheddar cheese and remaining onions
Step 9: Return to oven and bake another 3 mintes or unil cheese is melted
Step 10: Variation
Step 11: 1 package Uncle Ben's rice pillaf (in the orange precooked package (omit the regular rice)
Step 12: Omit the bouillon
Step 13: Use frozen chopped broccoli or frozen mixed vegetables thawed and chopped
Step 14: Italian seasoning if desired (sometimes I leave it out)
Step 15: In the baking dish mix vegetables, Parmesan cheese, and rice
Step 16: Bake covered for 10 minutes at 375 degrees
Step 17: Remove from oven.
Step 18: Lay fish diagonally down dish, cover with foil and bake for 20-25 Minutes or till fish flakes easily.
Step 19: Remove from oven and sprinkle with onions and cheddar cheese (I use a little more cheddar cheese)
Step 20: Return to oven uncovered and bake until cheese is melted.
