Step by Step Method

Step 1

In a medium bowl, stir together toasted coconut, oats, brown rice cereal, flaxseed, and cinnamon.

Step 2

In a bowl, whisk together nut butter, honey, and vanilla. Pour over oat mixture and stir until everything is well combined. Stir in chocolate chips. Chill in refrigerator for 30 minutes.

Step 3

Use a small scoop, spoon, or your hands to scoop mixture and form into balls. I usually press the mixture into a ball using my palm, rather than rolling it. Store in an airtight container in the refrigerator for up to 1 week.

These are incredible! They're flavorful and sweet and soft and crunchy, all at once. We didn't have any mini chocolate chips, so I substituted chopped dates. And I used a two tablespoon scoop to form the mixture into balls (and got exactly eighteen). Of all the treats we enjoyed this holiday season, these turned out to be our number one favorite!
