  • 1/2 cup flaked coconut (toasted)
  • 1 cup oats (old-fashioned or whatever)
  • 1/2 cup crisp rice cereal (brown)
  • 1/2 cup ground flaxseed
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup nut butter (almond butter or peanut butter or whatever you like)
  • 1/3 cup cup honey
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (can substitute dried blueberries or raisins)

How to Make

  • Step 1: In a medium bowl, stir together toasted coconut, oats, brown rice cereal, flaxseed, and cinnamon.

  • Step 2: In a bowl, whisk together nut butter, honey, and vanilla. Pour over oat mixture and stir until everything is well combined. Stir in chocolate chips. Chill in refrigerator for 30 minutes.

  • Step 3: Use a small scoop, spoon, or your hands to scoop mixture and form into balls. I usually press the mixture into a ball using my palm, rather than rolling it. Store in an airtight container in the refrigerator for up to 1 week.
