"One of my oldest recipes! Both of my kids grew of eating it since they were small children and now they are both making it for their kids. For some reason, this really appeals to kids who stick up their noses at one dish meals. It's quick and delicious."

Step by Step Method

Step 1

Cook rice and onion in oil until rice is lightly browned, stirring frequently.

Step 2

Add ham, beans, broth and 1/2 c. water. Heat to boiling.

Step 3

Turn into a 2 qt. casserole. Cover and bake at 350 for 45 minutes or until rice is tender.

Step 4

Stir just before serving.

Step 5

Can be assembled ahead of time, refrigerated and then baked. May need to add a little more baking time.

So easy & so tasty. I made the whole recipe and will try freezing half. I used fresh beans but otherwis followed the recipe. Oven time is right on. I stirred the casserole 15 minutes before it was finished - Will make this again for sure & will let you know how it freezes. 21 June It froze perfectly. I defrosted it in the fridge, heated it covered in a 350 oven for 30 minutes.Came out as delish as the initial take.
