Ham Hock Fritters

Step by Step Method
Step 1
In a large saucepan over medium heat had the ham hock with enough water to cover and bring to a boil. Reduce heat to low and cook for 2 hours our until tender and falling off the bone. With a slotted spoon, remove from heat and let cool.
Step 2
Preheat oven to 350 degrees F. Bake potato for 1 hour or until tender when pierced. Cut in half and scoop out the potato (discard skin) and transfer to medium bowl and mash. Stir in chives, cheese and mustard.
Step 3
Pull ham from bone and with 2 forks , shred ham; cut into small pieces and stir into the potato mixture. Shape mixture into 2 inch cylinders. Roll each cylinder in flour, then in the beaten egg and then in the breadcrumbs; transfer to a baking sheet. Repeat with remaining mixture.
Step 4
In a skillet, heat oil to 375 degrees F and working in batches, fry fritters for 2 minutes or until golden. Transfer to paper towels lines tray. Heat oil to 375 degrees F for each batch. Serve with plum and chili jam.
